GRILLED ROSSO ROSETTA RICE POLENTA WITH CREAMED MACKEREL AND DILL

Ingredients:

• 400 gr Rosso Rosetta Rice Polenta
• 1 l water

For the dressing:
• 300 g of mackerel filleted and cut into small pieces
• 200 g of sunflower oil
• 50 g of delicate extra virgin olive oil
• 6 g of salt
• dill to taste
• pepper as needed.
• 200 gr milk
• 500 gr of water

How to prepare it:





Put the mackerel in a saucepan with the milk and water, bring to the boil and cook for 10 min.
Once cooled, drain, taking care to keep the cooking liquids aside. In a bowl and fitted with a whisk, whip the mackerel, after a few seconds pour in the oils and continue to whisk until the mixture becomes homogeneous, if necessary add a little cooking water to soften the mixture. Chop the dill and add to taste, let it rest for a few hours.
In a saucepan, boil the water, pour the rice polenta, taking care to mix constantly. Cook over low heat, stirring the polenta for about 20 minutes. Adjust with a drizzle of olive oil, salt and pepper to taste. Allow to cool before cutting into slices. Put a non-stick pan on the heat to heat the sliced ​​polenta or grill it for a few seconds on both sides. Serve and finish with the marinated mackerel and a dill leaf.
