VEGAN RICE SALAD

Ingredients:





For 4 Persons:

  • 350 gr. of Carnaroli Rice
  •  3 zucchini
  • 3 carrots
  • 2 apples
  • Extra virgin olive oil
  • 80 gr. of raisins
  • Lemon juice
  • 400 gr. of raspberries
  • 240 gr. of balsamic vinegar
  • 60 gr. of sugar

Preparation

Bring plenty of water to boil in a saucepan, add salt when it comes to a boil and throw in the rice. Cook for about 15/17 minutes. When cooked, drain the rice and let it cool.

In the meantime, prepare the condiments, then wash and dice the courgettes, carrots and apples. In a pan, cook diced carrots and zucchini with a drizzle of extra virgin olive oil. for about 15 minutes, seasoning with pepper and salt.

Prepare a raspberry balsamic vinegar: in a pan cook the raspberries with the addition of sugar for 5/10 minutes. Remove from the heat, blend the mixture and filter it to remove the remaining seeds. In another pan, simmer the balsamic vinegar, arranging it with the addition of sugar, for about 30 minutes until the desired consistency is obtained.

Season the rice with the cooked vegetables, raisins and diced apples. Finish with lemon juice and garnish with raspberry balsamic vinegar.
