RICE AND BEANS SOUP

Ingredients:





For 4 persons:

  • 200 g Melotti Arborio Rice – new product 2021
  • 1 l vegetable broth
  •  200 g dried beans
  • 50 g smoked bacon
  • ½ onion
  • Extra virgin olive oil, salt and pepper, as needed

Preparation






Rinse the beans, put them in a bowl and cover them abundantly with warm water, leaving them to soak for about ten hours. In a saucepan, heat 2 tablespoons of Extra virgin olive oil, add the previously chopped onion and the bacon cut into small cubes and brown everything. Add the drained beans and the boiling broth. Cover and leave to simmer for about two hours.

Add the rice and cook for about 17 minutes. When cooked, season with salt and serve warm with a good grind of pepper.
