AROMATIC SALAD OF ROSSO ROSETTA RICE WITH ZUCCHINI AND FRESH TUNA
Ingredients:
For 4 Persons:
- 400 g of Melotti Rosso Rosetta Rice
- 50 g of Fresh tuna
- 2 Zucchini
- 1/2 White onion
- 30 g of Capers
- 25 d of Marjoram
- 25 g of Sage
- 25 g of Bronte
- pistachios
- 25 g of Pine nuts
- 1 Clove of garlic
- Extra virgin olive oil, salt, and pepper, as needed
Preparation
Cook the Rosso Rosetta rice in salty water for about 40 minutes, drain it and let it rest. In a pan, sauté a spoonful of extra virgin olive oil and the thinly chopped onion. Add the cleaned zucchini (cut into small cubes), salt, pepper and cook for few minutes. Toss together, in the same pan, the thinly chopped aromatic herbs, pistachios, and pine nuts, with the Rosso Rosetta rice, adding a bit of extra virgin olive oil if needed. Clean the fresh tuna in running water, dry it with kitchen paper and cut into cubes of 1cm.
Sauté a bit of extra virgin olive oil with the squashed garlic, add the capers, the tuna, and cook for 1 minute. Add salt and pepper as needed.
Place the rice on a plate, place the prepared tuna on top, and add a few leaves of sage with chopped pine nuts and pistachios.
