BROWN RICE SALAD WITH MIXED VEGETABLES
Ingredients:
Per 4 person:
- 150 gr. of Vialone Nano Integral Rice
- 1 carrot
- 5 asparagus
- 1 fennel
- 1 radish
- 1 onion
- Extra virgin olive oil
- Salt and Pepper to taste
- Balsamic vinegar to taste
How to prepare it:
Salt the water and, starting from cold water, pour the rice inside. Put the pot on the stove and from the moment it boils, let it cook for 50-60 minutes. Meanwhile, prepare the washed and cut vegetables. Place the carrot and asparagus cut into rounds in a saucepan, sautéing them with a little extra virgin olive oil. and chopped onion until they reach the right crunchiness. Season with salt if necessary. Once ready, drain the rice and add it to the sautéed vegetables. Place the rice in a mold, pressing it well. Bake the mold for a few minutes then turn it over in the center of the plate and then decorate with some sautéed vegetables, flaked fennel and balsamic vinegar.
