RISOTTO WITH “LILLA'” RICE, SCALLOPS, FENNEL and LIME

Ingredients:





For four person:

• 400 g Melotti “Lillà” Rice
• 300 g fennel
• 6-8 scallops
• 800 ml hot vegetable broth (with carrots, celery, onion and a pinch of salt)
• 2/3 tbsp butter
• 1 lime
• Edible flowers (as garnish, if desired)
• Salt and freshly ground black pepper, to taste

How to prepare it





Prepare a light vegetable broth with carrots, celery and onion. Wash and trim fennel, finely slice lengthways with a mandoline. In a pan, with a drizzle of oil, cook fennel until nicely browned on both sides, about 5 minutes. When golden brown, remove the fennel from the heat and set it aside.
Clean the scallops carefully, removing the coral, gently pat them dry with a paper towel. Heat a drizzle of oil in a pan and sear the scallops for 1-2 minutes per side, add the butter and cook them until golden brown.

In a large pot, bring the broth to the boil, then add the rice. Simmer the rice for 15-18 minutes, covering and stirring occasionally. Add the fennel, a drizzle of oil and stir again. Plate risotto and top with the seared scallops and a sprinkle of lime zest. Garnish with edible flowers, if desired.
