BROWN RICE SOUP WITH BLACK CABBAGE. POTATOES AND BACON
Ingredients:
For 4 Persons:
- 250 g Melotti Vialone Nano Brown Rice
- 1,5 l Water
- 500 g of Black cabbage
- 2 Celery stalks
- 2 Carrots
- 2 Potatoes
- 1 Onion
- 1 Leek
- 40 g Bacon sliced in small cubes
- 1 bay leaf
- Extra virgin olive oil, coarse salt, and pepper as needed
Preparation
In a saucepan, brown 4 Tbl of extra virgin olive oil with the chopped onion and leek, and one bay leaf. Add the other vegetables cut into small pieces, along with water, coarse salt, rice, and let it cook for 50 minutes.
In a pan, brown the bacon with a bit of extra virgin olive oil until the bacon becomes crisp. Serve the soup with a bit of olive oil, the crunchy bacon, and pepper.
