PANZANELLA WITH LILLA' RICE
Typical Tuscan recipe, from Risotteria Melotti Firenze
Ingredients:
For 4 persons:
- 400 g Lilla’ Rice Melotti – new product 2021
- 320 g Rice bread
- 240 g cherry tomatoes
- 2 red onions
- 240 g cucumbers
- 160 g mixed salad
- 40 basil leaves
- Extra virgin olive oil, salt and pepper, as needed
- Rice vinegar as needed – new product 2021
Preparation
In a large pot, boil the rice in plenty of salted water for 14 minutes, when cooked, drain and season with oil and vinegar, then let it cool.
Chop bread and cucumbers into small pieces, cut the cherry tomatoes into quarters and the red onion into thin slices. Then combine all the ingredients with the rice and season them with oil, salt, vinegar and pepper.
Serve and garnish as desired with basil.
